Honey Glazed Chicken

Honey Glazed Chicken
from Kristen E on My Kitchen Cafe

2 lbs diced uncooked chicken breast
1/3 cup flour
1/2 tsp garlic powder
salt and pepper to taste

4 Tbsp butter, divided
1/4 cup honey
3 Tbsp honey
2 Tbsp soy sauce
1/2 tsp ground giner

Heat oven to 350. In a shallow dish combine the flour, garlic powder, salt and pepper. Dip each piece of chicken in the flour mixture and coat evenly.

Melt 2 Tbsp butter in a shallow baking dish, large enough to hold all of the chicken in a single layer. Arrange the chicken in the pan and bake uncovered for 30 minutes.

In a small saucepan, melt remaining butter and add honey, lemon juice, soy sauce and ginger. Simmer while the chicken is cooking for the first 30 minutes.

After chicken has baked 30 minutes, turn each piece over and pour sauce mixture evenly over the chicken. (I stirred the chicken around in the sauce with a spoon then put in all back into a single layer) Bake another 30-40 minutes, basting frequently (I didn't baste)

Serve over rice

Amy's Notes: I used 3 chicken breasts and it fed 2 adults and 2 kids, who both asked for 2nds. I might put some red pepper flakes in the sauce next time for a little extra kick. If you like sauce on your rice, double the sauce recipe. I thought it was fine without doubling the sauce, I just stirred it up with the rice on the plate.
